Cranberry Pecan Chicken Salad

 

This cranberry pecan chicken salad is perfect for any occasion: lunch, dinner, or an afternoon tea.

Ingredients:

  • 2 chicken breasts (rotisserie chicken from the deli), shredded

  • ½ cup celery, diced

  • ½ cup cranberries, dried

  • ¼ cup pecans, chopped

  • ¼ cup mayonnaise

  • Salt and pepper to taste

Instructions:

  1. Add chicken, celery, cranberries, and pecans in a mixing bowl. Toss well.

  2. Stir in mayonnaise and mix well.

  3. Cover and refrigerate to chill for at least 2 hours.  Best served chilled!

  4. Serve with your favorite bread or crackers.
