Chicken Pomodoro
Serves: 4 Prep time: 5 min. Cooking time: 20 min. Total time: 25 min.
Chicken Pomodoro is chicken in tomato sauce. The multicolor heirloom cherry tomatoes burst to make a light, fresh, and flavorful sauce that keep the chicken breast moist. Make extra sauce and serve over your favorite cooked pasta for another meal.
Ingredients:
4 or 1 lb. boneless, skinless chicken breasts, thinly sliced
Himalayan salt
Freshly ground pepper
2 large shallots, sliced thinly into rings
6 garlic cloves, thinly sliced
1/2 cup chives, chopped
1/3 cup extra virgin olive oil, divided
1/2 tsp. crushed red pepper flakes
4 cups (32oz.) multicolor heirloom cherry tomatoes
1/4 cup White Balsamic Vinegar
1/4 cup Chardonnay wine
Instructions:
1. Pat chicken breast dry and season both sides with salt and pepper.
2. Heat a large skillet over medium-high. Add 3 tbsp. of olive oil, then place the chicken in the skillet. Press down on the cutlets firmly with a spatula to ensure the chicken is making good contact with the surface of the pan, then cook, undisturbed, until the underside is deep golden brown, about 4 to 6 minutes. Turn the cutlets and cook until golden brown on the second side and just cooked through, 1 to 2 minutes more. Transfer chicken to a platter.
3. Lower the heat to medium and add the remaining 3 tbsp. of olive oil. Add the garlic and shallots and cook, stirring, until the shallot is transparent and garlic is starting to turn light golden brown, 1 to 2 minutes. Season with salt and red pepper flakes.
4. Add the tomatoes and cook stirring occasionally, until their skins start to shrivel, 4 minutes. Using the back of the spoon, gently smash tomatoes until they split open and release their juices (do not flatten them, simply encourage them to burst). Cook until slightly saucy, 2 minutes more.
5. Add the vinegar and wine and stir to combine.
6. Remove from the heat and stir in chives. Spoon burst tomato sauce over chicken cutlets.
7. Serve with pasta or Italian bread.
