Salad with Pomegranate Seeds and Feta Cheese

Celebrate the Holidays with a mix of colorful greens, ruby red pomegranate seeds, and white feta cheese.

Yield: 12

Ingredients:

  • 10 oz. Spring Mix, Red and Green Romaine, Lollo Rosso, Arugula, Mustard and Beet Greens, Spinach, Frisee, and Radicchio

  • ¾ cup Feta Cheese

  • 1 Pomegranate seeded

  • ¼ Roasted pine nuts

  • Salt and pepper to taste

Dressing:

  • 4 Tbsp. white balsamic vinegar

  • 2 Tbsp. olive oil

  • 2 Tbsp. Pomegranate Molasses

Instructions:

  1. Combine salad mixture into a large bowl.

  2. Add feta, pomegranate seeds, pine nuts and salt and pepper to taste.

  3. Mix dressing and toss into salad mixture.

  4. Serve immediately.
