Ricotta Toast with Berries

Here is a light breakfast idea for those of you who cannot stomach much in the morning.  Enjoy it topped with your favorite fruit

Prep Time: 5 min. | Total Time: 5 min. | Yield: 1

Ingredients:

1 slice whole wheat or raisin toast

1/4 cup Ricotta cheese, whole milk or low-fat

Drizzle of honey, optional

3/4 cup fresh berries, rinsed

Instructions:

  1. Toast your favorite kind of bread.

  2. Spread Ricotta cheese on top of toasted bread.

  3. Smear in a drizzle of honey for a slightly sweeter taste.

  4. Top with your favorite fruit:  strawberries, blueberries, raspberries, mixed berries, sliced peach, sliced nectarine, or sliced banana.

  5. Rise and Shine!
