German Chocolate Date Bites

These date bites are naturally sweetened, vegan, and gluten free. They make for a nutrient dense snack, rich in fiber, manganese, mono-unsaturated fat, flavonoids, copper, and zinc. They are great for an afternoon, after school, or a pre- or post- workout snack.

Ingredients:
16 pitted Medjool dates
1 cup raw pecans
1 cup unsweetened shredded coconut, toasted
¼ cup chocolate protein powder or cocoa or cacao powder
½ cup Old Fashioned rolled oats
1 Tbsp. vanilla
Pinch of sea salt
Instructions:
Pre-heat oven to 350 degrees. Toast coconut on a baking sheet for 5 – 8 minutes or until golden in color. Be sure to watch the coconut closely since it can burn easily. Let cool.
Place the first 6 ingredients (dates through cocoa powder) in a food processor. Pulse until all the ingredients are combined.
Add vanilla and sea salt and pulse once more. If the dough seems too dry, add a little water, 1 Tbsp. at a time.
Unplug food processor. Scoop dough from the food processor and form into small balls with your hands.
Place balls into a sealed storage container. The bites will keep in the fridge for a week or in the freezer for 1 – 2 months.
