BBQ'd Flank Steak Salad
Flank steak is lean and flavorful. It cooks quickly and the marinade tenderizes the meat and intensifies the beef flavor.

Ingredients:
Meat
1 lb. Flank steak
2 Tbsp. Dijon mustard
2 Tbsp. Olive Oil
2 Tbsp. white wine
2 tsp. Worcestershire
½ tsp. black pepper
Dressing
¼ cup sesame rice vinegar
2 Tbsp. Dijon mustard
1 Tbsp. Olive Oil
1 Tbsp. pomegranate molasses
½ tsp. dried oregano
¼ tsp. black pepper
Salad
1 small head of red leaf lettuce; washed, drained, and sliced into thin strips
1 head of Butter leaf lettuce
1 cup Arugula
½ cup fresh finely chopped basil
½ cup grape tomatoes, sliced in half
3 green onions, chopped
Instructions:
Meat Preparation
Mix all ingredients in a 9×13 inch baking dish. Add Flank steak and coat each side with marinade. Cover.
Refrigerate 2 hours or overnight.
Place steak in broiler or on BBQ and cook for 8 minutes on each side, or until desired doneness.
Slice Flank steak diagonally on cutting board into paper thin strips.
Salad and Dressing Preparation
Mix together dressing ingredients and refrigerate until needed.
Toss all vegetables into large bowl.
Toss with half the salad dressing, arrange on serving plates, top with steak and sprinkle with remaining dressing.
Serve with crusty French bread and fruit.
