Cucumber Avocado Salad

This delicious, refreshing salad can go with any meal or can be made for a picnic, BBQ, or potluck.

Yield: 6

Ingredients:

  • 6 Persian cucumbers, sliced

  • 1 yellow onion, diced

  • 1 avocado, cut and cubed

  • ¼ tsp. cayenne pepper

  • Salt and pepper to taste

  • 1 Tbsp. olive oil

  • 1 Tbsp. fresh lemon juice

Instructions:

  1. Combine and toss all ingredients.
