Spinach Salad with Grapes, Feta, and Toasted Almonds

This simple salad is rich in iron, potassium, folate, vitamin C, fiber, and antioxidants.

Yield: 4

Ingredients:

  • 1 – 16 oz. bag spinach, chopped

  • 12 red grapes, sliced

  • ¼ cup feta

  • 1/8 cup almond slices, toasted

  • 1 Tbsp. olive oil

  • 1 tsp. Balsamic glaze

Instructions:

  1. In a large bowl, combine spinach, grapes, and feta.

  2. Toast almonds in a small pan over medium heat for about 2 minutes. Watch closely since they cook quickly. Let cool.

  3. Toss toasted almonds into spinach mixture.

  4. Add olive oil and drizzle balsamic glaze.

  5. Serve with your favorite entrée.
