Pasta with Fresh Tomato Sauce and Fresh Buffalo Mozzarella

This quick and simple pasta dish brings home the Italian flavors of fresh tomato sauce, basil, and fresh buffalo mozzarella. It is a family’s favorite meal and its presentation is colorful and beautiful.

Ingredients:
1 lb. whole wheat pasta
1 Tbsp. olive oil
3 garlic cloves, chopped
12 Roma tomatoes, chopped
salt and pepper to taste
¼ cup Sherry cooking wine
4 oz. fresh basil, coarsely sliced
16 oz. fresh baby Buffalo mozzarella balls (ciliegine, drained and cut in half)
Parmesan cheese to taste
Instructions:
Boil pasta as directed. Drain and place in a large pasta bowl.
In a large sauté pan, heat olive oil.
Sauté chopped garlic until lightly browned.
Add chopped tomatoes, salt and pepper to taste.
Add Sherry wine and simmer until tomatoes are lightly softened or until desired doneness.
Add fresh basil.
Toss sauce, pasta, and buffalo mozzarella in pasta bowl. Add Parmesan cheese to taste.
Serve with Italian chopped salad.
