Roasted Sweet Potatoes with Butter and Maple Syrup

These decadent roasted sweet potatoes are rich in both vitamins A and C.

Ingredients:
3 Tbsp. butter, melted
3 Tbsp. maple syrup
2 lbs. peeled and cut sweet potatoes
Salt and pepper to taste
Instructions:
Preheat oven 350 degrees.
Combine butter and maple syrup in a large bowl.
Toss in sweet potato and coat thoroughly.
Add salt and pepper to taste.
Spread sweet potato mixture onto a greased baking sheet lined with foil.
Bake until golden on the outside and tender on the inside, about 40 minutes.
