Roasted Sweet Potatoes with Butter and Maple Syrup

These decadent roasted sweet potatoes are rich in both vitamins A and C.

Prep Time: 5 | Cook Time: 40min | Total Time: 45min | Yield: 10-12

Ingredients:

  • 3 Tbsp. butter, melted

  • 3 Tbsp. maple syrup

  • 2 lbs. peeled and cut sweet potatoes

  • Salt and pepper to taste

Instructions:

  1. Preheat oven 350 degrees.

  2. Combine butter and maple syrup in a large bowl.

  3. Toss in sweet potato and coat thoroughly.

  4. Add salt and pepper to taste.

  5. Spread sweet potato mixture onto a greased baking sheet lined with foil.

  6. Bake until golden on the outside and tender on the inside, about 40 minutes.
