All Fruit and Greek Yogurt Popsicle

 

These fun, easy to make popsicles are perfect for any hot summer day.  These red, white and blue stripped “Rocket” popsicles are made especially for the 4th of July with fresh red raspberries, vanilla Greek yogurt, and fresh blueberries.  Raspberries are rich in vitamin C, fiber, and polyphenols.  Blueberries are high in vitamin C, manganese, fiber, and potassium.  You can make these all fruit and Greek yogurt popsicles, with no added sugars, with any of your favorite fresh fruits.  Try banana and blueberries, or mango and pineapple, or strawberries and blueberries.

Yield: 8

Ingredients:

  • 1 cup raspberries

  • 1 cup blueberries

  • 1 cup vanilla Greek yogurt

Instructions:

  1. In a blender, combine raspberries with 1/4 cup water and blend until smooth.  Pour puree into popsicle mold filling until one-third full.  Freeze molds until solid, about one hour.

  2. Remove the popsicle molds from the freezer and add yogurt.  Layer molds with yogurt until molds are two-thirds full.  Freeze molds again until the yogurt layer is solid, about one hour.

  3. In a blender, combine blueberries with 1/4 cup water and blend until smooth.  Pour puree into popsicle molds, filling the remainder of the mold until full.  Freeze until completely hardened at least three hours.

  4. Remove popsicles from molds and enjoy!
