Chicken Marsala

This simple and delicious chicken dish is made from wholesome and fresh ingredients for your next family gathering.

Prep Time: 15min | Cook Time: 15min | Total Time: 30min | Yield: 4

Ingredients:

  • 1 pound chicken, thinly cut cutlets

  • 2 Tbsp. flour

  • 2 Tbsp. butter or margarine

  • 2 Tbsp. chopped shallots

  • ½ pound mushrooms, sliced

  • 1/4 cup 1% milk

  • 1/2 cup low sodium chicken broth

  • 4 Tbsp. Marsala or Madeira wine

  • 1 tsp. corn starch

  • Salt and pepper to taste

  • Finely chopped parsley

Instructions:

  1. Coat chicken cutlets in flour., salt and pepper to taste.

  2. Melt ½ of butter or margarine in large skillet.

  3. Add add chicken; sauté until chicken is golden, about 4 minutes on each side. Transfer chicken transfer chicken to a platter and set aside.

  4. Add remaining butter and shallots and sauté until translucent, Add mushrooms; sauté three to five minutes over medium high heat, until browned.

  5. Add milk, chicken broth, and wine to skillet. Simmer to a boil.

  6. Add cornstarch. Stir.

  7. Add chicken. and simmer over medium high heat until sauce reduces to 2/3-3/4 cup and thickens enough to coat a spoon lightly.

  8. Garnish with parsley.

  9. Serve over pasta with asparagus.
