Chicken Marsala

This simple and delicious chicken dish is made from wholesome and fresh ingredients for your next family gathering.

Ingredients:
1 pound chicken, thinly cut cutlets
2 Tbsp. flour
2 Tbsp. butter or margarine
2 Tbsp. chopped shallots
½ pound mushrooms, sliced
1/4 cup 1% milk
1/2 cup low sodium chicken broth
4 Tbsp. Marsala or Madeira wine
1 tsp. corn starch
Salt and pepper to taste
Finely chopped parsley
Instructions:
Coat chicken cutlets in flour., salt and pepper to taste.
Melt ½ of butter or margarine in large skillet.
Add add chicken; sauté until chicken is golden, about 4 minutes on each side. Transfer chicken transfer chicken to a platter and set aside.
Add remaining butter and shallots and sauté until translucent, Add mushrooms; sauté three to five minutes over medium high heat, until browned.
Add milk, chicken broth, and wine to skillet. Simmer to a boil.
Add cornstarch. Stir.
Add chicken. and simmer over medium high heat until sauce reduces to 2/3-3/4 cup and thickens enough to coat a spoon lightly.
Garnish with parsley.
Serve over pasta with asparagus.
