Beer Chicken

A twist to cooking traditional beer chicken!

Ingredients
1 tablespoon Canola oil
4 (4 oz.) skinless, boneless chicken breast halves
¼ teaspoon cumin
¼ teaspoon Chili powder
Salt and pepper to taste
½ cup sweet onion, chopped
½ can beer
2 tablespoon low sodium soy sauce
1 tablespoon honey
1 tablespoon Dijon mustard
Instructions:
Season chicken with cumin, chili powder and salt and pepper to taste.
Add canola oil to large skillet over medium-high heat.
Brown chicken on both sides about 5 minutes on each side or until done.
Set cooked chicken aside and keep warm in a serving dish.
Add chopped onion to skillet and cook until translucent, about 1 minute.
Whisk together beer, soy sauce, honey, and Dijon mustard in a small bowl.
In skillet with chicken remnants and onion, add beer mixture. Simmer for 5 more minutes.
Pour sauce and onion mixture over chicken.
Serve with baked potato and your favorite green vegetable.
