Linguini with Clams

Linguine with clams in a garlic white wine sauce makes an easy and elegant Italian pasta dinner.  Perfect for Valentine’s Day for two!

Ingredients:

16 oz. Linguini pasta, cooked                                                                                    

2 Tbsp. Extra Virgin Olive oil

6 garlic cloves, coarsely chopped

2 (6.5 oz.) cans minced clams with clam juice

1 (10 oz.) can whole baby clams, rinsed

½ cup Chardonnay wine

2 Tbsp. fresh parsley, chopped and divided

1 Tbsp. fresh basil, chopped

1 tsp. crushed red pepper flakes

Instructions:

1.      Cook Linguini as directed on package.

2.      Heat olive oil in a large saucepan over medium heat.

3.      Sauté garlic, about 2 minutes.

4.      Add minced clams with clam juice, whole baby clams and season with 1 Tbsp. chopped parsley, basil, and crushed red pepper flakes.

5.      Mix well and bring clam sauce to a boil.

6.      Reduce heat and simmer for 15 – 20 minutes, stirring occasionally.

7.      Add cooked pasta with to sauté pan with the clams.  Toss the linguini with the clam sauce until the pasta absorbs most of the sauce, 1 – 2 minutes. 

8.      Serve immediately in a serving dish or bowl.  Garnish with remaining parsley.
