Sugar Cookies

 

The best sugar cookies ever! Fun to make and decorate with family and friends.

Yield: 24 3” cookies -or 36 2” cookies

Prep Time:  45 minutes  Cook Time:  20 minutes

Total Time:  65 minutes.

Note: Best to chill dough overnight.

Ingredients:

For the Cookies:

3 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, softened

1 1/4 cup granulated sugar

2 large eggs

1 1/4 teaspoons vanilla extract

For the Icing:

1 cup confection sugar

1 egg white

Instructions:

For the Cookies

1.. Combine flour, baking soda, and salt in a medium bowl. Set aside.

2. Beat butter in mixer bowl until creamy. Beat in sugar until light and fluffy.

3. Add eggs one at a time beating well after each addition. Then add vanilla.

4. Beat in dry ingredients until blended.

5.. Divide the dough into quarters. Roll one quarter 1/16 inch thick between two sheets of wax paper. Repeat with remaining dough.

6. Stack on cookie sheet and refrigerate at least 4 hours or up to 24 hours. .

7. Preheat Oven to 350 degrees. Fahrenheit.

8. Grease two cookie sheets. Remove the top sheet of wax paper from one dough quarter and cut into desired shapes with cookie cutters.

9. Transfer to prepared cookie sheet. Bake for 6-7 minutes, until the edges of the cookies are golden.

10. Cook on wire rack. Repeat with remaining dough. Roll scrapes to get as many cookies as possible. If the dough becomes too soft, return to the refrigerator.

:For the Icing:

Mix together ingredients until smooth. Tint with food coloring if desired . Apply or paint and decorate with a pastry brush.
