Dark Sweet Cherry Crisp

The crumbly, toasted oats over the warm dark sweet cherries, served with a scoop of ice cream or a dollop of whipped cream, make a wonderful dessert. The cherries are rich in fiber, vitamin C, potassium, antioxidants, and cancer fighting and anti-inflammatory properties. This crisp can be prepared the day before and warmed before serving.

Ingredients:
Filling
7 cups pitted, frozen dark sweet cherries
½ cup brown sugar
¼ cup sugar
4 Tbsp. all-purpose flour
1 Tbsp. vanilla
1 tsp. cinnamon
Topping
1 cup raw oats
½ cup all-purpose flour
¼ cup brown sugar, firmly packed
1 tsp. cinnamon
¼ cup pecans, chopped
½ cup butter
Instructions:
Preheat oven to 375 degrees.
In a large mixing bowl, mix cherries with sugar flour vanilla and cinnamon.
Place mixture in a 9 inch X 13 inch baking dish sprayed with cooking spray.
In a bowl, combine oatmeal, flour brown sugar, cinnamon, pecans, and butter.
Stir with a fork or mix with hand until mixture is crumbly.
Sprinkle over cherry mixture.
Bake 30 minutes or until the crumble is lightly brown.
Serve warm with low fat frozen vanilla yogurt, light ice cram or light whipped topping. Bon Appétit!
